Soluble coffee is also known as freeze-dried coffee. Originally invented in 1901 by the Chicago based Japanese scientist Satori Kato. It wasn't until 1909, that the American George Washington launched soluble coffee to the mass market. His Red E Coffee (a play on the word 'ready') made him his fortune. His process involves coffee beans being desiccated in hot air then freeze-dried to 40^oC. This produces small, pure coffee granules with a long shelf life, with all of the flavours and the aroma being preserved.
